About the menu:
95% of our menu is homemade by us. The recipes have been developed over
the many years that Shaw Smitherman and his wife Romei have been
cooking.
All of the sauces, rubs and dust are all original to BAMA-que.
Shaw Smitherman has spent many years eating his way to all of these
top-notch recipes. We will have these items available for sale at
BAMA-que soon so you can take some home with you.
The original BAMA-Que BBQ sauce has a strong vinegar taste. Romei
has a sweet-tooth so she likes everything sweet. Therefore, the "Sweet"
sauce is a "sweet" variation of the original sauce. For those who
prefer a little "heat" with their sweet - the "sweet heat" sauce
is the one for you.
Alabama White Sauce is an Eastern Alabama tradition. We like it
on greens and chicken but you might like it on other stuff as well- you
have to ask for it because we keep it in the refrigerator.
The rub is good for all types of meat. The dust is good sprinkled on
everything from french fries, homemade potato chips, scrambled eggs ...
you name it. The Sauces explained: The original BAMA-que has a strong
vinegar taste. For those who want less vinegar and more sweet taste the
Sweet Sauce is the one to try. If you like the perfect combination of
sweet and heat, then the Sweet Heat Sauce is the best one for you. The
Alabama white sauce is great on chicken and greens but you are welcome
to try it on everything else.
Shaw's passion is meat. Romei's passion is everything else ...
